Hungry anyone??? Here’s a great nutrition recommendation from Gabrielle…

I had to pass this on. Below is an excerpt of an email from Gabrielle (R.I.P.P.E.D. Challenge Participant on the Blue Team) that she sent to some of the girls in the Challenge. She gave me the ok to pass it on to all of you. Gabrielle makes a great recommendation on what to do with left-overs. (Gerry is her husband.)

“Gerry is wondering if I can come up with the perfect RIPPED meal.  I like the idea of an entire entree that includes all the nutrients, yet is satisfying and delicious.  (Sometimes when I piece things together, it’s the correct fuel, but not so enjoyable.  Of course that’s fine for snacks and on-the-go, but when it comes to lunch and dinner, I like to enjoy my food.)

So tonight I made a frittata for dinner!  While it can involve multiple steps, it’s a great way to use up left-over cooked veggies and pasta.  I was already making some multigrain spaghetti for the family, so I used that along with some freshly steamed spinach … and added some stir-fried mushrooms, pasillas and garlic, as well as some low fat feta and of course the egg whites.  I thought it was great.  (I didn’t make one for Gerry because he went to Costco and got a big box of Famous Amos cookies — ha!  But I gave him a bite and he liked it.)  Let me know what you guys think of it.”

How good does this look (click on the image for a bigger picture):

If anyone else has cooking and meal preparation recommendations please share them….

Alane & I have been making a great smoothie for breakfast that has all of our nutrients in it and tastes great. Check out the recipe below:
    1 cup milk = 1 milk serving
2 tsp peanut butter = 1 fat servings
    1.13 oz banana = 1/2 fruit serving
    3.25 strawberries = 1/2 fruit serving
14 grams whey protein = 2 meat (protein) servings (7 grams per serving)
    3-4 ice cubes

    Optional Add-ons:
    3/4 tbsp honey = 1 carbohydrate serving
7 grams whey protein = 1 more meat (protein) serving
2 tsp peanut butter = 1 more fat serving

Put all ingredients into blender and blend for 1-2 minutes until well combined. Pour into glass and enjoy. It will produce about 20-22oz. We remove the froth from the smoothie because it doesn’t taste the greatest. These ratios work well for our meal breakouts. The ingredients listed on top are what Alane uses, while I include the add-ons because I require more servings. ENJOY!!! Keep the recipes coming :)

That sounds awesome Landon. I am going to work with the Deli here at the Club to get a “R.I.P.P.E.D. Shake” on the menu. I might have to borrow a couple of your recommendations….

Thanks so much for the good wishes, Terry. We had an incredible date last night. We went to Restaurant 162 at the Ritz Carlton in Laguna Niguel. We were both extremely impressed with both the service, food, and ambiance. I would recommend it highly as a great restaurant maybe for that “cheat” meal. Anyway, we will be doing some extra cardio over the next few days to compensate for our celebration. This first year flew by. Looking forward to many more…
