Its going to be a very interesting talk on foods and supplements to help prevent cancer and new research on Vitamin D supplementation and its benefits for cancer fighting.

Sounds good — I’ve been thinking about going.

I’m enjoying all the foods that fit into Chuck’s plan, and I can only hope that all these veggies I’m eating are helping my cells to fight off any cancers!

As some of you may know, Chuck has increased my good fat allotment. So, I’m trying to incorporate more nuts in my cooking. I just mentioned to him that I’ve been using pinenuts (take the extra 1-2 minutes to toast them in a skillet — it really brings out the flavor and crunch!) over my cooked veggies. He thought it was a good idea, and it really is delish. Also, I’m sure everyone is topping their salads with nuts, but I wanted to suggest (if you’re not doing this already) adding chopped nuts in tuna and chicken salads. Cashews go really well in tuna and pecans (the “sweet and spicy” ones from TJ’s are my fave) or walnuts go well in chicken. Just toast, smash up in a plastic baggie and sprinkle on top. Good texture, salt and fat!

    ;)
