“HOLIDAY” CHILI RECIPE
This is a smoky, flavorful chili; for additional heat, cayenne pepper can be added. Can be made ahead of time – the flavors are even better the next day. Equipment needed: 6-7 quart stockpot or Dutch oven. Or, for maximum infusion of flavor, use a 6 quart pressure cooker and cook for 10 minutes on medium after browning meat but prior to adding the beans.
2 lbs. ground meat (I prefer organic beef, but turkey can be used.)
1 diced red or yellow onion
1 can rinsed red kidney beans (15 oz.)
1 can rinsed black beans (15 oz.)
1 can tomato sauce (15 oz.)
1 can corn (optional)
2 diced bell peppers (I use orange at Halloween and red at Christmas.)
½ C beer (alcohol will cook off)
½ C BBQ sauce (I like smoky style)
2T Worcestershire sauce
1T dark chili powder
1T cumin seeds, ground
1T coriander seeds, ground
Olive oil as needed, about 1T
Salt and pepper, to taste
1. In heated stockpot or Dutch oven, swirl around olive oil to coat bottom. Sautee onion until golden brown. Remove onion and set aside.
2. Brown meat and crumble with wooden spoon. Add salt and pepper, chili powder, cumin, coriander and Worcestershire sauce and continue to brown for approx. 5 minutes.
3. Return onions to pot, add peppers; cook 5 minutes more.
4. Add beer, BBQ sauce and tomato sauce and bring to a simmer.
5. Add beans and corn (if using).
6. Cover and simmer for about 10 minutes. Adjust seasoning.
7. Ladle into serving bowls and serve with topping such as: avocado, non-fat sour cream, fresh cilantro, sharp cheddar or pepper jack cheese. A good dipper is pita chips (I like cilantro-jalapeno or lemon-herb varieties).

We’re coming over to your house on Halloween nite when we take the kids Trick-or-Treating. Can’t wait to taste the best Chili in Orange County!

I made the chili and it turned out great, thanks so much for the recipe! My husband loved it too! It’s a great recipe, you can cook it early in the day(before you go the gym) and just warm it up when you get home.
